Ingredients

The spread and sauce

  • cup mayonnaise
  • 2 Tbsp. sriracha
  • 2 Tbsp. soy sauce
  • 1 Tbsp. fresh lime juice
  • 1 Tbsp. fresh lemon juice
  • more to taste fresh lemon juice

The toppings

  • 3 pieces Persian cucumbers, coarsely chopped
  • 1 piece avocado, coarsely chopped
  • 1 Tbsp. finely chopped pickled ginger
  • to taste Kosher salt
  • 4 oz. smoked salmon, torn into bite-size pieces
  • 4 slices country-style bread, lightly toasted
  • to taste toasted sesame seeds
  • to taste seasoned toasted seaweed snacks

Instructions

  1. Mix mayonnaise and sriracha in a small bowl to create spicy mayo.
  2. Combine soy sauce, lime juice, and lemon juice in another small bowl to make ponzu sauce.
  3. In a medium bowl, combine chopped cucumbers, avocado, and pickled ginger; season with salt and lemon juice.
  4. Add the smoked salmon to the cucumber mixture and toss gently with ponzu sauce.
  5. Spread spicy mayo on toasted bread, top with salmon mixture, drizzle with remaining ponzu, and sprinkle with sesame seeds and seaweed.
