Mango Avocado Soba Noodles with Sesame Salmon Poke

Ingredients

Salmon Poke

  • ¼ cup low-sodium soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon honey
  • 1 inch fresh ginger, grated
  • 1 clove garlic, minced or grated
  • 1 pound sushi grade salmon, cut into chunks

Soba Noodles

  • 12 ounces soba noodles
  • 3 tablespoons sesame oil
  • 4 pieces green onions, chopped
  • ¼ cup tahini
  • ½ unit lemon juice
  • 2 tablespoons oyster sauce
  • 1 unit mango, cut into matchsticks
  • 1 cup snap peas
  • 1 unit avocado, diced
  • 1 unit Persian cucumber, sliced
  • to taste unit sprouts, sesame seeds, and/or hot chili sauce for serving

Instructions

  1. Whisk together soy sauce, vinegar, honey, ginger, and garlic in a bowl. Add salmon and toss to combine, marinating for up to 8 hours in the fridge.
  2. Cook soba noodles according to package directions and rinse under cold water.
  3. Heat a large skillet over medium-high heat and add sesame oil. Cook green onions for 30 seconds to 1 minute.
  4. Remove the skillet from heat, add soba noodles, and toss to combine. Stir in tahini, lemon juice, and oyster sauce.
  5. Gently toss in mango, snap peas, and avocado.
  6. Divide noodles among bowls and top with salmon, cucumbers, sprouts, and sesame seeds. Serve and enjoy!
