Ingredients

Poke Sauce

  • 8 ounces sushi grade salmon
  • ½ cup soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon sriracha
  • 1 tablespoon rice wine vinegar
  • ½ teaspoon garlic, minced
  • ½ teaspoon ginger, minced
  • 1 teaspoon lime juice
  • 1 teaspoon sesame seeds
  • 1 green onion thinly sliced

Poke Bowl

  • 2 cups cooked rice
  • 1 cup edamame
  • ½ large avocado, sliced
  • ½ cup purple cabbage, chopped
  • 1 small jalapeño, optional
  • 1 cup pickled cucumbers

Instructions

  1. Whisk together the poke sauce ingredients in a bowl.
  2. Add the salmon cubes to the sauce and mix until well combined.
  3. In serving bowls, layer the sushi rice, followed by edamame, avocado, purple cabbage, and pickled cucumber.
  4. Top each bowl with the marinated salmon poke, toasted sesame seeds, and sliced green onions.
  5. Serve with sliced jalapeños if desired.
