Ingredients

The Tuna

  • 1 lb sushi grade bluefin tuna, diced into 1/2” cubes
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons low sodium tamari
  • ½ teaspoon rice wine vinegar
  • ½ teaspoon black sesame
  • 1 teaspoon fresh ginger, minced
  • ¼ cup sliced green onion

The Sriracha Mayo

  • 3 tablespoons mayo
  • 3 teaspoons sriracha

The Bowl

  • 1 cup jasmine rice, cooked
  • 2 cups cucumber, thinly sliced
  • 1 cup shaved carrots
  • 2 pieces avocados, sliced

Instructions

  1. Mix mayo and sriracha in a small bowl and set aside.
  2. Combine tuna, sesame oil, tamari, black sesame, ginger, rice wine vinegar, and green onion in a medium bowl. Toss gently and let marinate for 15 minutes.
  3. Cook jasmine rice and prepare the veggies while the tuna marinates.
  4. Assemble the poke bowl with ¼ cup rice, 4 oz tuna, ½ cup cucumber, ¼ cup carrots, and ½ avocado per serving.
  5. Garnish with additional green onion, black sesame seeds, and a drizzle of sriracha mayo.
