Ingredients

Sushi Rice

  • 2 cups sushi rice
  • cups water

Sushi Rice Seasoning

  • ¼ cup rice vinegar
  • 2 tsp sugar
  • ¼ tsp salt

Ginger Marinade Dressing

  • tbsp light or all purpose soy sauce
  • 2 tsp dark soy
  • tbsp toasted sesame oil
  • 2 tbsp mirin
  • 2 tbsp rice vinegar
  • tsp chilli paste or Sriracha
  • tsp grated ginger

Poke Bowl

  • 350 g sashimi grade tuna
  • 1 small carrot
  • 1 small cucumber
  • 1 small avocado
  • 6 pieces red radish
  • 1 cup shelled edamame
  • 1 green onion finely sliced
  • to taste black sesame seeds

Instructions

  1. Cook sushi rice by boiling water and rice, then simmer until water is absorbed.
  2. Let the rice sit covered for 15 minutes after cooking.
  3. Mix sushi rice seasoning ingredients until sugar dissolves.
  4. Spread the rice in a pan, drizzle half the seasoning over it, and fold gently.
  5. Let the rice cool to warm or room temperature.
  6. Prepare the dressing by mixing all dressing ingredients in a bowl.
  7. Divide the cooled rice into bowls and top with radish, carrot, edamame, and avocado.
  8. Toss the diced tuna in the dressing and place it on top of the rice.
  9. Sprinkle cucumber, green onion, and sesame seeds on top.
  10. Drizzle remaining dressing over the bowls and serve immediately.
