Lemony Kale and Quinoa Salad

Ingredients

  • 1 Tbsp olive oil
  • 2 cloves garlic
  • ½ bunch Dinosaur/Lacinato Kale
  • cups vegetable broth
  • 1 cup uncooked quinoa
  • 1 fresh lemon
  • ¼ cup chopped walnuts
  • 1 oz crumbled feta

Instructions

  1. Rinse the quinoa well to remove bitterness.
  2. Remove the stems from the kale and slice the leaves into strips.
  3. Mince the garlic and sauté it in olive oil until softened.
  4. Add the kale to the pot and sauté until wilted.
  5. Stir in the quinoa and vegetable broth, then bring to a boil.
  6. Reduce heat and simmer for 15 minutes until quinoa is cooked.
  7. Check the quinoa and adjust cooking time if necessary to absorb excess liquid.
  8. Zest half of the lemon and prepare the walnuts and feta.
  9. Once cooked, remove from heat and mix in lemon zest and juice, walnuts, and feta.
