Lemony Kale and Quinoa Salad

Instructions
- Rinse the quinoa well to remove bitterness.
- Remove the stems from the kale and slice the leaves into strips.
- Mince the garlic and sauté it in olive oil until softened.
- Add the kale to the pot and sauté until wilted.
- Stir in the quinoa and vegetable broth, then bring to a boil.
- Reduce heat and simmer for 15 minutes until quinoa is cooked.
- Check the quinoa and adjust cooking time if necessary to absorb excess liquid.
- Zest half of the lemon and prepare the walnuts and feta.
- Once cooked, remove from heat and mix in lemon zest and juice, walnuts, and feta.
