Blender Chocolate Chip Cottage Cheese Muffins

Ingredients

  • 1 cup cottage cheese
  • ¼ cup pure maple syrup
  • 2 large eggs
  • 1 ½ tsp pure vanilla extract
  • ¼ tsp almond extract
  • 1 cup super fine blanched almond flour
  • ¾ cup old fashioned oats
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with liners and cooking spray.
  2. Blend all ingredients except for the chocolate chips in a high-speed blender until smooth, being careful not to over-blend.
  3. Stir in the chocolate chips by hand.
  4. Spoon the batter into the muffin tin, filling for either 10 larger muffins or 12 smaller ones.
  5. Bake for about 22 minutes, or until a knife inserted comes out clean.
