Instructions
- 1. Preheat the oven to 350°F and grease a muffin pan with nonstick spray.
- 2. In a high-powered blender, add the ingredients as listed, stopping before the chocolate chips.
- 3. Blend until completely smooth, scraping down the sides as needed and adding more milk if the mixture is too thick.
- 4. Let the batter rest for 5 minutes to thicken, then stir in the chocolate chips.
- 5. Divide the batter evenly among the muffin cups and top with a few more chocolate chips.
- 6. Bake for 20 minutes and let cool for 10 minutes before serving.
