Ingredients

  • 1 piece ripe banana
  • 2 cups rolled oats
  • ½ cup cottage cheese
  • ½ cup almond milk
  • 2 pieces eggs
  • cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F and grease a muffin pan with nonstick spray.
  2. 2. In a high-powered blender, add the ingredients as listed, stopping before the chocolate chips.
  3. 3. Blend until completely smooth, scraping down the sides as needed and adding more milk if the mixture is too thick.
  4. 4. Let the batter rest for 5 minutes to thicken, then stir in the chocolate chips.
  5. 5. Divide the batter evenly among the muffin cups and top with a few more chocolate chips.
  6. 6. Bake for 20 minutes and let cool for 10 minutes before serving.
