Instructions
- Preheat the oven to 350°F and prepare a muffin tin with liners and non-stick spray.
- Add all base ingredients to a blender, starting with the dry ingredients.
- Blend until smooth, ensuring not to over-blend.
- Pour the batter into the muffin tins, filling them about ¾ full.
- Add about 2 tablespoons of your chosen mix-ins to each muffin.
- Use a toothpick or knife to press the mix-ins into the batter for even distribution.
- Bake for 18-22 minutes, or until a toothpick comes out clean.
- Allow to cool and store at room temperature for up to two days or in the fridge for up to a week.
