Ingredients

The muffin base

  • 2 cups rolled oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
  • 2 large eggs
  • 2 large bananas
  • ½ cup applesauce
  • ¼ cup maple syrup
  • 1 tsp vanilla

Mix-in options

  • 1 cup blueberries
  • 1 small diced apple
  • 1 tsp cinnamon
  • 1 diced banana
  • ½ cup chopped walnuts
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with liners and non-stick spray.
  2. Add all base ingredients to a blender, starting with the dry ingredients.
  3. Blend until smooth, ensuring not to over-blend.
  4. Pour the batter into the muffin tins, filling them about ¾ full.
  5. Add about 2 tablespoons of your chosen mix-ins to each muffin.
  6. Use a toothpick or knife to press the mix-ins into the batter for even distribution.
  7. Bake for 18-22 minutes, or until a toothpick comes out clean.
  8. Allow to cool and store at room temperature for up to two days or in the fridge for up to a week.
