Cottage Cheese Muffins

Instructions
- Preheat the oven to 400°F and line a muffin pan with paper baking cups.
- In a bowl, combine cottage cheese, ½ cup of parmesan, flour, almond meal, baking powder, most of the herbs, water, eggs, and salt, then mix well.
- Spoon the mixture into the muffin cups until about ¾ full and sprinkle the remaining parmesan and herbs on top.
- Bake for 30-35 minutes until set, risen, and golden brown. Serve hot or at room temperature.
