Cottage Cheese Muffins

Ingredients

  • 1 cup plain cottage cheese
  • ¾ cup parmesan cheese, freshly grated
  • ¼ cup flour
  • 1 cup almond meal or almond flour, finely ground
  • 1 teaspoon baking powder
  • ¼ cup water
  • 4 large eggs, lightly beaten
  • ½ teaspoon salt
  • cup fresh herbs (thyme, oregano, chives)

Instructions

  1. Preheat the oven to 400°F and line a muffin pan with paper baking cups.
  2. In a bowl, combine cottage cheese, ½ cup of parmesan, flour, almond meal, baking powder, most of the herbs, water, eggs, and salt, then mix well.
  3. Spoon the mixture into the muffin cups until about ¾ full and sprinkle the remaining parmesan and herbs on top.
  4. Bake for 30-35 minutes until set, risen, and golden brown. Serve hot or at room temperature.
