Low-Carb Cottage Cheese Muffins with Cheddar & Scallions

Ingredients

  • C. cottage cheese
  • ¼ C. grated Parmigiano Reggiano
  • ¼ C. whole wheat flour
  • C. almond flour
  • 1 tsp. baking powder
  • ¼ tsp. kosher salt
  • 4 units eggs, beaten
  • 3 T. water
  • ½ C. sharp cheddar
  • 2 T. sliced scallions

Instructions

  1. Preheat the oven to 400ºF.
  2. In a large mixing bowl, combine cottage cheese, Parmigiano Reggiano, whole wheat flour, almond flour, baking powder, salt, eggs, and water, mixing until well combined.
  3. Fold in the sharp cheddar and scallions.
  4. Line a muffin pan with 6 to 8 liners and coat lightly with cooking spray.
  5. Divide the batter between the muffin cups and bake for 20-25 minutes or until lightly browned on top and set.
