Instructions
- Preheat the oven to 400ºF.
- In a large mixing bowl, combine cottage cheese, Parmigiano Reggiano, whole wheat flour, almond flour, baking powder, salt, eggs, and water, mixing until well combined.
- Fold in the sharp cheddar and scallions.
- Line a muffin pan with 6 to 8 liners and coat lightly with cooking spray.
- Divide the batter between the muffin cups and bake for 20-25 minutes or until lightly browned on top and set.
