Instructions
- Preheat the oven to 375°F and line a muffin tin with paper liners.
- In a large bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the wet ingredients: cottage cheese, grated apples, oil, milk, cinnamon, egg, and vanilla extract.
- Pour the wet mixture over the dry ingredients and blend until the dough is smooth.
- Pour the mixture into the muffin tins.
- Mix the topping ingredients together and sprinkle over the muffins.
- Bake in the oven for about 20 minutes.
