Ingredients

The muffins

  • 1 ½ cups whole-wheat flour or all-purpose flour
  • ½ cup white sugar
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 pinch salt
  • 1 cup cottage cheese at 1% M.G.
  • 1 cup apples, grated
  • ¼ cup oil
  • ¼ cup milk
  • 1 ½ tsp ground cinnamon
  • 1 large egg
  • 1 tsp vanilla extract

The topping

  • ¼ cup brown sugar
  • ½ cup oatmeal
  • ¼ cup butter, melted

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with paper liners.
  2. In a large bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the wet ingredients: cottage cheese, grated apples, oil, milk, cinnamon, egg, and vanilla extract.
  4. Pour the wet mixture over the dry ingredients and blend until the dough is smooth.
  5. Pour the mixture into the muffin tins.
  6. Mix the topping ingredients together and sprinkle over the muffins.
  7. Bake in the oven for about 20 minutes.
