Ingredients

Wet Ingredients

  • 1 medium banana, mashed
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup 2% cottage cheese
  • ¼ – ⅓ cup unsweetened almond milk
  • 3 tablespoons melted coconut oil

Dry Ingredients

  • cups ground oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • teaspoon salt

Instructions

  1. Mash the banana in a medium mixing bowl and whisk in the eggs.
  2. Add the remaining wet ingredients (except for coconut oil) and mix until combined.
  3. In a separate bowl, mix all dry ingredients well.
  4. Combine the dry ingredients with the wet ingredients and mix.
  5. Stir in the melted coconut oil until the batter is smooth, adjusting almond milk as needed for consistency.
  6. Heat a nonstick skillet over medium heat and grease it with coconut oil or butter.
  7. Scoop a heaping ¼ cup of batter onto the skillet and cook for about 2-3 minutes on each side until golden brown.
  8. Serve and enjoy!
