Instructions
- Mash the banana in a medium mixing bowl and whisk in the eggs.
- Add the remaining wet ingredients (except for coconut oil) and mix until combined.
- In a separate bowl, mix all dry ingredients well.
- Combine the dry ingredients with the wet ingredients and mix.
- Stir in the melted coconut oil until the batter is smooth, adjusting almond milk as needed for consistency.
- Heat a nonstick skillet over medium heat and grease it with coconut oil or butter.
- Scoop a heaping ¼ cup of batter onto the skillet and cook for about 2-3 minutes on each side until golden brown.
- Serve and enjoy!
