Ingredients

  • 2 large eggs
  • ½ cup cottage cheese
  • 1 ½ cups old fashioned rolled oats
  • 2 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 2 teaspoons baking powder
  • ¼ teaspoon fine sea salt
  • ¼ cup water

Instructions

  1. Blend the eggs, cottage cheese, oats, olive oil, maple syrup, baking powder, salt, and water until smooth.
  2. Heat a skillet over medium heat until a drop of water sizzles on contact.
  3. Grease the pan with cooking oil and pour ¼ cup of batter for each pancake.
  4. Spread the batter into a round shape and cook for about 2 minutes.
  5. Flip the pancake when it easily lifts with a spatula and cook for another 2 minutes until puffy.
  6. Repeat with the remaining batter, adjusting heat as necessary.
  7. Serve warm with your favorite toppings.
