Fluffy Cottage Cheese Pancakes

Instructions
- Blend the eggs, cottage cheese, oats, olive oil, maple syrup, baking powder, salt, and water until smooth.
- Heat a skillet over medium heat until a drop of water sizzles on contact.
- Grease the pan with cooking oil and pour ¼ cup of batter for each pancake.
- Spread the batter into a round shape and cook for about 2 minutes.
- Flip the pancake when it easily lifts with a spatula and cook for another 2 minutes until puffy.
- Repeat with the remaining batter, adjusting heat as necessary.
- Serve warm with your favorite toppings.
