Ingredients

The batter

  • ¾ cup cottage cheese
  • cups rolled oats
  • ½ cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 2 tbsp honey
  • to taste butter or oil (for coating the pan)

Optional toppings

  • to taste butter
  • to taste maple syrup
  • to taste fresh berries
  • to taste sliced bananas

Instructions

  1. Blend all ingredients in a high-speed blender until smooth.
  2. Let the batter sit for at least 5 minutes to thicken.
  3. Heat a griddle or frying pan on low to medium heat and coat with oil or butter.
  4. Pour ¼ cup portions of batter onto the pan and cook until golden brown on each side, about 2 minutes per side.
  5. Serve warm with your choice of toppings.
