Instructions
- Blend all ingredients in a high-speed blender until smooth.
- Let the batter sit for at least 5 minutes to thicken.
- Heat a griddle or frying pan on low to medium heat and coat with oil or butter.
- Pour ¼ cup portions of batter onto the pan and cook until golden brown on each side, about 2 minutes per side.
- Serve warm with your choice of toppings.
