Instructions
- Mix cottage cheese, milk, and egg yolks until smooth, then stir in the cauliflower.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Combine the flours, baking powder, and salt, then add to the cottage cheese mixture and stir until just combined.
- Gently fold the egg whites into the batter.
- Heat a griddle or pan over medium heat, add butter or oil, and spoon batter into the pan for each pancake.
- Cook until golden on one side, then flip and cook until the other side is golden and cooked through.
- Keep cooked pancakes warm in a low oven until all are finished.
