Ingredients

The batter

  • 1 cup cottage cheese
  • ¾ cup milk
  • 4 large eggs, separated
  • 1 cup raw cauliflower, chopped
  • ½ cup whole wheat pastry flour
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • scant ½ teaspoon fine grain sea salt

For cooking

  • as needed none butter or oil

Instructions

  1. Mix cottage cheese, milk, and egg yolks until smooth, then stir in the cauliflower.
  2. In a separate bowl, beat the egg whites until stiff peaks form.
  3. Combine the flours, baking powder, and salt, then add to the cottage cheese mixture and stir until just combined.
  4. Gently fold the egg whites into the batter.
  5. Heat a griddle or pan over medium heat, add butter or oil, and spoon batter into the pan for each pancake.
  6. Cook until golden on one side, then flip and cook until the other side is golden and cooked through.
  7. Keep cooked pancakes warm in a low oven until all are finished.
