Instructions
- Slice the zucchini very thin using a knife or mandolin slicer.
- Brown the ground beef and season with salt, pepper, garlic powder, and oregano. Add marinara and simmer for at least 20 minutes on low.
- In a skillet, heat olive oil over medium heat and sauté the zucchini for about 5-10 minutes.
- Distribute the zucchini evenly in the skillet or transfer to a casserole dish.
- Pour the meat sauce over the zucchini, then add mozzarella, dollops of ricotta, and grate parmesan on top.
- Turn the oven to broil and broil for 4-5 minutes, watching closely to prevent burning.
- Remove from the oven, garnish with basil, and serve.
