Ingredients

  • 4-5 cups Thin Sliced Zucchini
  • 1.5 lbs Lean Ground Beef
  • 1 tsp Garlic Powder
  • 1 tsp Oregano
  • to taste Salt and Pepper
  • 20 ounces Pasta Sauce
  • 1.5 cups Part Skim Mozzarella Cheese
  • 1 cup Part Skim Ricotta Cheese
  • ½ cup Parmesan Cheese
  • to garnish Basil

Instructions

  1. Slice the zucchini very thin using a knife or mandolin slicer.
  2. Brown the ground beef and season with salt, pepper, garlic powder, and oregano. Add marinara and simmer for at least 20 minutes on low.
  3. In a skillet, heat olive oil over medium heat and sauté the zucchini for about 5-10 minutes.
  4. Distribute the zucchini evenly in the skillet or transfer to a casserole dish.
  5. Pour the meat sauce over the zucchini, then add mozzarella, dollops of ricotta, and grate parmesan on top.
  6. Turn the oven to broil and broil for 4-5 minutes, watching closely to prevent burning.
  7. Remove from the oven, garnish with basil, and serve.
