Chocolate Pistachio Protein Balls

Instructions
- Blend the pistachios in a food processor and transfer to a large bowl.
- Whisk in the remaining dry ingredients.
- Add the syrup and vanilla extract, mixing well by hand.
- Roll the mixture into bite-sized balls.
- If the mixture is too dry, add more almond butter or syrup; if too wet, add more flour.
- Freeze the balls on a cookie sheet, then coat with extra cocoa or ground pistachios if desired.
- Store in the freezer or refrigerator for freshness.
