Ingredients

The base

  • 1 cup pistachios, shell removed
  • cup dark chocolate, finely chopped or ground
  • 1 ½ Tablespoons coconut flour, protein powder, or oat flour
  • ¼ cup unsweetened cocoa powder
  • cup almond butter or tahini
  • ¼ to ⅓ cup maple syrup or honey
  • ½ teaspoon vanilla extract

Optional coating

  • to taste extra ground pistachio or cocoa powder

Instructions

  1. Blend the pistachios in a food processor and transfer to a large bowl.
  2. Whisk in the remaining dry ingredients.
  3. Add the syrup and vanilla extract, mixing well by hand.
  4. Roll the mixture into bite-sized balls.
  5. If the mixture is too dry, add more almond butter or syrup; if too wet, add more flour.
  6. Freeze the balls on a cookie sheet, then coat with extra cocoa or ground pistachios if desired.
  7. Store in the freezer or refrigerator for freshness.
