Chocolate Peanut Butter Protein Balls

Ingredients

  • 1 ¼ cups Medjool dates, pitted
  • ¼ cup peanut butter
  • ¾ cup old fashioned rolled oats
  • 3 tablespoons mini chocolate chips
  • 1 tablespoon chia seeds
  • teaspoon kosher salt
  • 3 tablespoons cocoa powder

Instructions

  1. Soak the dates in boiling water for 10 minutes if they are dry, then drain and pat dry.
  2. Pulse the dates in a food processor until broken into small bits.
  3. Add the oats, peanut butter, chocolate chips, chia seeds, and salt to the processor and pulse until mixed but not completely smooth.
  4. Add the cocoa powder and pulse to combine.
  5. Check the consistency; if too dry, add more peanut butter, if too sticky, add more oats.
  6. Roll the mixture into balls of your desired size.
  7. Enjoy immediately or chill in the refrigerator for about 10 minutes to set.
