Ingredients

The mixture

  • 1 cup Medjool dates, pitted
  • ½ cup creamy peanut butter, all-natural and drippy in texture
  • 2 tablespoons ground flax seeds
  • ¼ teaspoon fine sea salt
  • 1 cup crispy rice cereal

The coating

  • ¾ cup chocolate chips
  • to taste coarse sea salt (optional topping)

Instructions

  1. Process the pitted dates in a food processor until broken down.
  2. Add the peanut butter, ground flax seeds, and salt, and process until a uniform dough forms.
  3. Mix in the crispy rice cereal briefly until slightly broken down.
  4. Scoop the dough with a tablespoon and roll into 20 balls.
  5. Place the balls on a parchment-lined baking sheet and freeze to firm up.
  6. Melt the chocolate chips in a double boiler until smooth.
  7. Coat each peanut butter ball with melted chocolate and return to the baking sheet.
  8. Sprinkle with coarse sea salt if desired and refrigerate until the chocolate hardens.
