Ingredients

The base

  • 1 cup peanut butter
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • ½-¾ teaspoon sea salt

The mix-ins

  • 2 cups crispy rice cereal

The coating

  • 1 cup vegan chocolate chips
  • drizzle none coconut oil or coconut butter (optional)

Optional decorations

  • none none shredded coconut
  • none none white chocolate (melted and drizzled)
  • none none ground nuts of choice
  • none none chopped cranberries or cherries
  • none none skinny pretzel sticks or cereal twigs

Instructions

  1. Mix peanut butter, maple syrup, vanilla, and salt in a bowl until well combined.
  2. Add the crispy rice cereal to the mixture and mix until a dough forms.
  3. Line a baking sheet with parchment paper and roll the dough into small balls.
  4. If not coating in chocolate, refrigerate the balls for 10-15 minutes to harden.
  5. If coating in chocolate, melt the chocolate chips and coconut oil together.
  6. Dip each ball into the melted chocolate and place back on the baking sheet.
  7. Decorate with optional toppings if desired and refrigerate for 15-20 minutes to harden.
