Instructions
- Mix peanut butter, maple syrup, vanilla, and salt in a bowl until well combined.
- Add the crispy rice cereal to the mixture and mix until a dough forms.
- Line a baking sheet with parchment paper and roll the dough into small balls.
- If not coating in chocolate, refrigerate the balls for 10-15 minutes to harden.
- If coating in chocolate, melt the chocolate chips and coconut oil together.
- Dip each ball into the melted chocolate and place back on the baking sheet.
- Decorate with optional toppings if desired and refrigerate for 15-20 minutes to harden.
