Ingredients

The mixture

  • 1 cup 100% natural peanut butter
  • 3.5-4 tablespoons pure maple syrup
  • 1-3 tablespoons coconut flour
  • ¼ teaspoon fine grain sea salt
  • 6 tablespoons gluten-free rice crisp cereal

The coating

  • ¾ cup dark chocolate chips
  • ½ tablespoon coconut oil

Instructions

  1. Stir the peanut butter well before using.
  2. Mix the peanut butter and maple syrup in a large bowl until it thickens.
  3. Add coconut flour as needed to achieve the right texture.
  4. Stir in salt and rice crisp cereal.
  5. Shape the mixture into small balls.
  6. Melt chocolate chips and coconut oil in a small pot over low heat.
  7. Dip the balls into the melted chocolate and place them on parchment paper.
  8. Freeze the balls for 6-8 minutes until firm.
  9. Drizzle leftover chocolate on top for decoration.
  10. Freeze again for 10-15 minutes until the chocolate is set.
