Ingredients

Peanut Butter Balls

  • ¾ cup natural peanut butter
  • ¼ cup honey
  • cup coconut flour
  • a pinch sea salt

Chocolate Coating

  • 4 ounces dark chocolate
  • to taste coarse sea salt

Instructions

  1. Mix peanut butter, honey, coconut flour, and salt in a medium bowl until a dough forms.
  2. Roll the dough into balls and place them on a parchment-lined pan.
  3. Freeze the balls for about 20 minutes until firm.
  4. Melt the chocolate using a double boiler or microwave.
  5. Dip each ball into the melted chocolate, coating thoroughly.
  6. Sprinkle with coarse sea salt if desired, then return to parchment paper.
  7. Allow the chocolate to harden, either at room temperature or in the fridge.
  8. Store in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 3 months.
