Ingredients

Butter Chicken

  • tablespoons coconut oil
  • 4 teaspoons garam masala
  • 1 teaspoon ground ginger
  • ½ teaspoon chilli powder
  • 1 teaspoon curry powder
  • 1 small onion, diced
  • teaspoons salt
  • teaspoons ground black pepper
  • 14 oz coconut milk
  • 6 oz tomato paste
  • tablespoons whole wheat flour
  • 2 pounds chicken breasts, chopped into bite-size pieces

Basmati Rice

  • 2 cups basmati rice
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • ½ teaspoon garam masala (optional)
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon butter

Instructions

  1. Heat coconut oil in a large pan over medium-high heat and sauté the onions until translucent.
  2. Mix garam masala, ground ginger, chilli powder, and curry powder, then add to the onions and cook briefly.
  3. Stir in coconut milk, tomato paste, and whole wheat flour, mixing well and bringing to a boil.
  4. Reduce to a simmer and cook for about 5 minutes to thicken the sauce.
  5. Add the chicken, then season with remaining garam masala, salt, and pepper.
  6. Bring to a boil again, reduce heat, and cook for 8 minutes until chicken is done.
  7. Let the chicken sit in the sauce for 10 minutes to absorb flavors.
  8. Garnish with parsley or cilantro and serve with basmati rice and naan.
