Ingredients

The filling

  • 1 lb Lean Ground Beef or Turkey
  • 1 oz Taco Seasoning Packet
  • 1 ½ cups Refried Beans
  • cup Salsa

The layers

  • 4 8-inch Flour Tortillas
  • ¼ cup Enchilada Sauce (optional)
  • 2 ½ cups Shredded Cheese

Garnish

  • to taste Sour Cream
  • to taste Cilantro
  • to taste Extra Salsa
  • to taste Hot Sauce

Instructions

  1. Brown the meat using the sauté setting and stir in taco seasoning halfway through.
  2. Wash the pot and add 1 ½ cups of water.
  3. Mix the refried beans with the salsa.
  4. Spray a 7"x3" pan with cooking spray and layer a tortilla at the bottom.
  5. Spread ½ cup of the refried bean mixture over the tortilla.
  6. Add 1 cup of the cooked meat and 1 cup of cheese.
  7. Repeat layering with another tortilla, ½ cup of refried beans, 1 cup of meat, and ½ cup of cheese.
  8. Continue with a third tortilla and repeat the layers.
  9. Place the final tortilla on top and cover with foil.
  10. Set the pan on a trivet in the pot, ensuring it sits above the water.
  11. Lock the lid and set to pressure cook for 17 minutes.
  12. After cooking, allow a 10-minute natural release, then release remaining steam.
  13. Remove the pan carefully and broil with additional cheese until browned.
  14. Let it cool slightly, then remove from the pan and serve with garnishes.
