Instructions
- Preheat the oven to 400°F.
- Heat olive oil in a large skillet over medium heat and cook the onion, bell pepper, and jalapeno until softened.
- Increase heat to medium-high and add ground beef, cooking until browned.
- Stir in diced tomatoes, black beans, frozen corn, and spices, cooking for a few minutes to combine.
- Transfer the mixture to a baking dish, top with cheese and frozen sweet potatoes.
- Bake for 30 to 35 minutes until sweet potatoes are heated through.
- Serve with sour cream if desired.
