Instructions
- Preheat the oven to 400°F.
- Heat olive oil in a cast iron skillet over medium heat and cook onions until softened.
- Add ground beef and cook until nearly browned, breaking it up as it cooks.
- Stir in bell and hot peppers and cook until soft.
- Add seasonings, diced tomatoes, and corn, then bring to a light boil and turn off the heat.
- In a separate pot, combine milk, cornmeal, butter, and salt, and bring to a light boil while whisking.
- Once thickened, spread the mixture over the meat layer in the skillet.
- Top with shredded cheese and bake until golden brown, about 20 minutes.
- Garnish with sour cream, avocado, and cilantro if desired, and serve.
