Ingredients

The meat layer

  • 1 tablespoon olive oil
  • ½ onion diced
  • 1 pound ground beef
  • 1 bell pepper cored, seeded, and diced (any color)
  • ½ jalapeño minced (or other hot pepper)
  • 2 teaspoons chili powder
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • 1 15-oz can diced tomatoes
  • 1 cup frozen corn kernels

The tamale topping

  • cups milk
  • 1 cup cornmeal
  • 3 tablespoons butter
  • ½ teaspoon salt
  • 1 cup Monterey Jack cheese

Suggested accompaniments

  • to taste sour cream

  • to taste cilantro

Instructions

  1. Preheat the oven to 400°F.
  2. Heat olive oil in a cast iron skillet over medium heat and cook onions until softened.
  3. Add ground beef and cook until nearly browned, breaking it up as it cooks.
  4. Stir in bell and hot peppers and cook until soft.
  5. Add seasonings, diced tomatoes, and corn, then bring to a light boil and turn off the heat.
  6. In a separate pot, combine milk, cornmeal, butter, and salt, and bring to a light boil while whisking.
  7. Once thickened, spread the mixture over the meat layer in the skillet.
  8. Top with shredded cheese and bake until golden brown, about 20 minutes.
  9. Garnish with sour cream, avocado, and cilantro if desired, and serve.
