Ingredients

The filling

  • 1 Tbsp olive oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, finely minced
  • 1 ½ lbs lean ground beef
  • 1 can (29 oz) tomato puree
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 2 cups frozen sweet white corn
  • 1 can (4 oz) diced green chilies
  • 1 ½ Tbsp chili powder
  • 2 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • to taste salt and freshly ground black pepper
  • 4 oz shredded monterey jack or cheddar cheese
  • to serve chopped green onions or cilantro and sour cream

The tamale crust

  • 2 cups masa harina
  • ½ cup salted butter, cold and diced
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 ½ cups hot water

Instructions

  1. Preheat the oven to 350°F.
  2. Heat olive oil in a deep skillet over medium-high heat and brown the ground beef.
  3. Drain the fat, reserving 1 Tbsp, and set the beef aside.
  4. In the same skillet, sauté the onion until golden, then add garlic for the last minute.
  5. Stir in the tomato puree, beef, beans, corn, chilies, and spices, and simmer.
  6. In a bowl, mix masa harina, baking powder, and salt, then blend in the butter until crumbly.
  7. Stir in hot water and distribute the masa mixture into ramekins.
  8. Layer the beef mixture on top of the masa, sprinkle with cheese, and bake for 30 minutes.
  9. Serve garnished with green onions or cilantro and sour cream.
