Instructions
- Preheat the oven to 350°F.
- Cook the ground beef in a skillet until browned, then stir in taco seasoning and bell pepper until softened.
- Add enchilada sauce, one can of green chiles, and one cup of corn, then remove from heat and sprinkle with one cup of cheddar cheese.
- In a separate bowl, mix the dry ingredients for the crust, then add oil and honey, followed by milk and eggs, and combine well.
- Stir in the remaining can of green chiles, half a cup of corn, and half a cup of cheese.
- Spoon the cornbread mixture over the beef layer.
- Bake for 30-35 minutes until golden brown, then cool for 5 minutes before drizzling with honey and garnishing.
