Ingredients

The filling

  • 1 pound lean ground beef
  • 1 cup medium red enchilada sauce
  • 1 cup chopped red bell pepper
  • 1 packet taco seasoning
  • ½ teaspoon salt
  • 2 4.5-ounce cans chopped green chiles
  • 1 ½ cups corn
  • 1 ½ cups shredded cheddar cheese

The crust

  • 1 cup gluten-free all-purpose flour
  • 1 cup yellow cornmeal
  • ¼ cup honey
  • 1 tablespoon baking powder
  • pinch salt
  • ¾ cup milk
  • 6 tablespoons avocado oil
  • 2 large eggs

To serve

  • 6 ounces honey for drizzling
  • to taste avocado for garnish
  • to taste jalapeños for garnish

Instructions

  1. Preheat the oven to 350°F.
  2. Cook the ground beef in a skillet until browned, then stir in taco seasoning and bell pepper until softened.
  3. Add enchilada sauce, one can of green chiles, and one cup of corn, then remove from heat and sprinkle with one cup of cheddar cheese.
  4. In a separate bowl, mix the dry ingredients for the crust, then add oil and honey, followed by milk and eggs, and combine well.
  5. Stir in the remaining can of green chiles, half a cup of corn, and half a cup of cheese.
  6. Spoon the cornbread mixture over the beef layer.
  7. Bake for 30-35 minutes until golden brown, then cool for 5 minutes before drizzling with honey and garnishing.
