Instructions
- Cook the ground beef in a cold pan over medium heat, breaking it up until fine.
- Add taco seasoning, tomato paste, and beef broth; cook until liquid is mostly absorbed.
- Mix half of the cheddar cheese into the beef and let it cool slightly.
- Preheat the oven to 350°F and grease a 10-inch cast iron skillet.
- In a food processor, combine mozzarella cheese, eggs, almond flour, baking powder, and corn extract; process until a thick batter forms.
- Spread the batter evenly in the skillet, then top with the taco meat mixture.
- Bake for 35-40 minutes, then add the remaining cheddar cheese on top and return to the oven until melted.
- Let cool for 5-10 minutes before serving with desired toppings.
