Ingredients

The filling

  • 2 teaspoons olive oil
  • 1 pound ground beef
  • ½ cup onion, finely chopped
  • 1 teaspoon garlic, minced
  • 1 tablespoon taco seasoning
  • 10 ounces red enchilada sauce
  • 15 ounces black beans, drained and rinsed
  • 1 cup corn kernels
  • to taste salt and pepper
  • as needed cooking spray

The topping

  • 8.5 ounces corn muffin mix
  • 1 each egg and milk as directed on the box
  • 1 cup cheddar cheese, shredded
  • as desired assorted toppings such as sour cream, avocado, and pico de gallo

Instructions

  1. Preheat the oven to 350°F and coat a 2-quart baking dish with cooking spray.
  2. Heat olive oil in a large pan over medium heat, add ground beef, and season with salt and pepper. Cook for 4-5 minutes.
  3. Add onion and cook for another 4 minutes until softened. Then add garlic and cook for 30 seconds.
  4. Stir in taco seasoning, enchilada sauce, beans, and corn. Simmer for 5 minutes.
  5. Pour the beef mixture into the prepared baking dish and spread evenly.
  6. In a bowl, combine corn muffin mix with egg and milk according to package directions, then mix in cheese.
  7. Spread the cornbread batter over the beef layer.
  8. Bake for 40-45 minutes until the topping is golden brown and a toothpick comes out with a few crumbs.
  9. If browning too quickly, cover with foil during baking. Cut into slices and serve with desired toppings.
