Instructions
- Preheat the oven to 350°F and coat a 2-quart baking dish with cooking spray.
- Heat olive oil in a large pan over medium heat, add ground beef, and season with salt and pepper. Cook for 4-5 minutes.
- Add onion and cook for another 4 minutes until softened. Then add garlic and cook for 30 seconds.
- Stir in taco seasoning, enchilada sauce, beans, and corn. Simmer for 5 minutes.
- Pour the beef mixture into the prepared baking dish and spread evenly.
- In a bowl, combine corn muffin mix with egg and milk according to package directions, then mix in cheese.
- Spread the cornbread batter over the beef layer.
- Bake for 40-45 minutes until the topping is golden brown and a toothpick comes out with a few crumbs.
- If browning too quickly, cover with foil during baking. Cut into slices and serve with desired toppings.
