Chicken Tamale Pie

Ingredients

The crust

  • cup all purpose flour
  • ½ cup yellow cornmeal
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons Smart Balance cooking oil
  • cup Smart Balance low fat milk
  • 1 large Smart Balance Omega-3 Grade A Natural egg
  • tablespoons taco seasoning

The filling

  • 1 14 ounce can cream-style corn
  • 1 4 ounce can chopped green chiles
  • 1 10 ounce can red enchilada sauce
  • 2 cups cooked, shredded chicken breast
  • 1 cup shredded white cheese (Jack or Pepperjack)
  • to taste cilantro
  • to taste crumbled Cotija cheese

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, taco seasoning, and oil until crumbly.
  3. Mix in the milk, egg, green chiles, and cream-style corn.
  4. Pour the mixture into a round 10-inch pie plate and bake for 20-30 minutes.
  5. While the crust is baking, toss the shredded chicken with the remaining taco seasoning.
  6. Once the crust is done, pierce it all over with a fork and pour the enchilada sauce on top.
  7. Add the seasoned chicken and sprinkle with cheese.
  8. Bake for an additional 15 minutes or until the cheese is melted and bubbling.
  9. Let it stand for 5 minutes before cutting into 8 pieces and topping with cilantro and Cotija cheese.
