Instructions
- Preheat the oven to 400°F.
- In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, taco seasoning, and oil until crumbly.
- Mix in the milk, egg, green chiles, and cream-style corn.
- Pour the mixture into a round 10-inch pie plate and bake for 20-30 minutes.
- While the crust is baking, toss the shredded chicken with the remaining taco seasoning.
- Once the crust is done, pierce it all over with a fork and pour the enchilada sauce on top.
- Add the seasoned chicken and sprinkle with cheese.
- Bake for an additional 15 minutes or until the cheese is melted and bubbling.
- Let it stand for 5 minutes before cutting into 8 pieces and topping with cilantro and Cotija cheese.
