Zucchini Gratin

Instructions
- Melt 2 tablespoons of butter in a pan over medium heat and preheat the oven to 350°F.
- Add zucchini and onion to the pan and sauté for 5-6 minutes until tender, seasoning with salt and pepper.
- Remove the zucchini mixture from the pan and keep warm.
- In the same pan, melt the remaining butter, add flour, and whisk for 1 minute.
- Whisk in milk and cook for 2-3 minutes, then add cream, thyme, and seasonings, cooking until thickened.
- Coat a baking dish with cooking spray and layer 1/4 of the sauce, followed by 1/3 of the zucchini mixture and 1/4 of the cheese.
- Repeat the layering process, finishing with breadcrumbs on top.
- Bake for 20 minutes until cheese is melted and breadcrumbs are golden brown.
- Sprinkle with parsley and serve.
