Summer Zucchini and Tomato Gratin

Ingredients

The vegetables

  • 2 medium zucchini
  • 4 to 5 pieces roma tomatoes

The seasoning and toppings

  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • to taste salt
  • to taste pepper
  • cup grated parmesan cheese
  • ¼ cup panko breadcrumbs
  • to taste fresh basil (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. Lightly coat an 8x8 inch baking dish with cooking spray.
  3. Arrange zucchini and tomato slices in an alternating pattern in the baking dish.
  4. Drizzle the veggies with olive oil and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper.
  5. Top with parmesan cheese and breadcrumbs, then cover with foil.
  6. Bake in the oven for 25 to 30 minutes until the veggies are tender.
  7. Remove the foil and bake for an additional 10 minutes until lightly browned.
  8. Top with fresh basil if desired, serve immediately, and enjoy!
