Summer Zucchini and Tomato Gratin

Instructions
- Preheat the oven to 375°F.
- Lightly coat an 8x8 inch baking dish with cooking spray.
- Arrange zucchini and tomato slices in an alternating pattern in the baking dish.
- Drizzle the veggies with olive oil and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Top with parmesan cheese and breadcrumbs, then cover with foil.
- Bake in the oven for 25 to 30 minutes until the veggies are tender.
- Remove the foil and bake for an additional 10 minutes until lightly browned.
- Top with fresh basil if desired, serve immediately, and enjoy!
