Instructions
- Preheat the oven to 400°F.
- Slice the zucchini and sprinkle with salt, letting it sit for 30 minutes to remove excess moisture.
- Blot the zucchini to remove moisture.
- In a saucepan, melt butter and sauté minced garlic until fragrant.
- Add cream cheese, heavy cream, Parmesan, and half of the cheddar cheese, stirring until melted.
- Season the cheese sauce with onion powder, salt, and pepper.
- Arrange zucchini in a baking dish and drizzle with the cheese sauce.
- Top with remaining cheddar and mozzarella cheese.
- Bake uncovered for 30-35 minutes until golden brown, broiling for a few minutes for a crisp top if desired.
- Cool before serving.
