Smoked Ham and Cheese Croissants

Instructions
- Prepare the pastry dough by mixing warm water, milk, and egg in a measuring cup.
- Combine flour, yeast, salt, and sugar in a food processor and pulse briefly.
- Add cold butter to the flour mixture and pulse until butter is in visible chunks.
- Combine the flour mixture with the milk-egg mixture and mix until just combined.
- Refrigerate the dough overnight or for at least 2 hours.
- Roll out the dough into a large square, fold it into thirds, and refrigerate for 30 minutes.
- Roll the dough out again and cut into triangles for croissants.
- Place slices of prosciutto and Gruyère on each triangle and roll them up.
- Place the rolled croissants on a baking sheet and let them rise for about 1½ hours.
- Preheat the oven to 350°F and bake the croissants for 15 to 20 minutes until golden.
