Smoked Ham and Cheese Croissants

Ingredients

Danish Pastry Dough

  • ¼ cup warm water
  • ½ cup milk
  • 1 large egg
  • cups all-purpose flour
  • 1 package instant yeast
  • 1 teaspoon kosher salt
  • 1 tablespoon sugar
  • 1 cup unsalted butter

Filling

  • 8 to 16 slices prosciutto di Parma or smoked ham
  • ½ oz Gruyère cheese per croissant
  • 1 egg for egg wash
  • 2 tablespoons milk for egg wash

Instructions

  1. Prepare the pastry dough by mixing warm water, milk, and egg in a measuring cup.
  2. Combine flour, yeast, salt, and sugar in a food processor and pulse briefly.
  3. Add cold butter to the flour mixture and pulse until butter is in visible chunks.
  4. Combine the flour mixture with the milk-egg mixture and mix until just combined.
  5. Refrigerate the dough overnight or for at least 2 hours.
  6. Roll out the dough into a large square, fold it into thirds, and refrigerate for 30 minutes.
  7. Roll the dough out again and cut into triangles for croissants.
  8. Place slices of prosciutto and Gruyère on each triangle and roll them up.
  9. Place the rolled croissants on a baking sheet and let them rise for about 1½ hours.
  10. Preheat the oven to 350°F and bake the croissants for 15 to 20 minutes until golden.
