Instructions
- Prepare the egg mixture by whisking eggs, half & half, salt, and pepper together.
- Heat olive oil in a non-stick skillet over medium heat.
- Pour in the egg mixture and gently scramble until mostly set.
- Preheat the oven to 375°F.
- Cut each croissant open halfway and place them on a baking sheet.
- Add a half slice of cheddar cheese to each croissant.
- Layer on turkey, ham, and bacon in each croissant.
- Scoop soft scrambled eggs into each croissant and sprinkle with chives.
- Use a toothpick to hold the sandwiches closed.
- Grate parmesan cheese on top of the croissants.
- Bake in the oven for 7-8 minutes until warm and cheese is melted.
- Serve immediately.
