Ingredients

  • 8 pieces Mini Croissants
  • 6 pieces Eggs
  • ¼ Cup Half & Half
  • ½ Teaspoon Kosher Salt
  • ½ Teaspoon Ground Black Pepper
  • 2 Teaspoons Olive Oil
  • 4 slices Sharp Cheddar Cheese
  • 8 slices Turkey
  • 8 slices Ham
  • 8 slices Bacon
  • 1 bunch Chives
  • to taste none Parmesan Cheese

Instructions

  1. Prepare the egg mixture by whisking eggs, half & half, salt, and pepper together.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Pour in the egg mixture and gently scramble until mostly set.
  4. Preheat the oven to 375°F.
  5. Cut each croissant open halfway and place them on a baking sheet.
  6. Add a half slice of cheddar cheese to each croissant.
  7. Layer on turkey, ham, and bacon in each croissant.
  8. Scoop soft scrambled eggs into each croissant and sprinkle with chives.
  9. Use a toothpick to hold the sandwiches closed.
  10. Grate parmesan cheese on top of the croissants.
  11. Bake in the oven for 7-8 minutes until warm and cheese is melted.
  12. Serve immediately.
