Strawberry, Basil and Crispy Prosciutto Breakfast Sandwich

Ingredients

  • 2 large croissants, sliced half lengthwise
  • 4-6 ounces sliced Brie
  • 4 slices thin prosciutto
  • 1 whole avocado, pit removed and sliced
  • 3-4 whole strawberries, sliced into circles
  • 2 whole poached or fried eggs
  • to taste Kosher salt and pepper
  • 6 leaves fresh basil
  • to drizzle honey

Instructions

  1. Preheat the oven to 450°F.
  2. Place the bottom halves of the croissants on a baking sheet and layer with Brie slices.
  3. On the other side of the baking sheet, lay the prosciutto in a flat layer.
  4. Bake in the oven for 8-10 minutes until the cheese is melted and the prosciutto is crispy.
  5. Meanwhile, cook the eggs to your liking.
  6. Remove the croissants from the oven and top with avocado and strawberries.
  7. Drizzle the strawberries with honey and sprinkle with salt.
  8. Add the crispy prosciutto and then the egg, sprinkling with salt and pepper.
  9. Add basil leaves and drizzle the whole sandwich with honey.
  10. Place the top half of the croissant on the sandwich and enjoy.
