Instructions
- Preheat the grill to medium-high.
- Whisk together the dressing ingredients and set aside.
- Brush or spray the romaine with olive oil and season with salt, then grill each side briefly until grill marks appear, keeping the lettuce crunchy.
- Grill the lemon, corn, fava beans, and optional shrimp over medium heat.
- Once the fava beans are tender, shuck and divide them among the romaine wedges.
- Cut the kernels off the corn and add them to the salad.
- Add the diced avocado and halved cherry tomatoes.
- Squeeze the salad with the grilled lemon halves and spoon the dressing over top.
- Scatter fresh herbs on top before serving.
