  • 2 hearts romaine
  • 1 ear corn
  • ½ pound fresh fava beans in pods
  • 1 lemon cut in half
  • ½ pound shrimp (optional)
  • 1 avocado diced
  • 1 pint cherry or grape tomatoes
  • to taste fresh herbs (Italian parsley or dill)

Dressing Options

  • ½ cup plain yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • 2 tablespoons chopped dill
  • ¼ teaspoon salt and pepper
  • 4 tablespoons olive oil (for lemon dressing)
  • 1 tablespoon sherry vinegar
  • 1 tablespoon lemon juice (for lemon dressing)
  • 1 teaspoon honey or agave
  • 1 teaspoon sumac (optional)
  • ½ teaspoon salt
  • 1 clove garlic (for lemon dressing)

Instructions

  1. Preheat the grill to medium-high.
  2. Whisk together the dressing ingredients and set aside.
  3. Brush or spray the romaine with olive oil and season with salt, then grill each side briefly until grill marks appear, keeping the lettuce crunchy.
  4. Grill the lemon, corn, fava beans, and optional shrimp over medium heat.
  5. Once the fava beans are tender, shuck and divide them among the romaine wedges.
  6. Cut the kernels off the corn and add them to the salad.
  7. Add the diced avocado and halved cherry tomatoes.
  8. Squeeze the salad with the grilled lemon halves and spoon the dressing over top.
  9. Scatter fresh herbs on top before serving.
