Grilled Romaine Salad with Lentils

Ingredients

The salad

  • 2 large heads romaine lettuce
  • 1 tbsp olive oil

The lentil salad

  • 1 400 mL can lentils
  • 1 medium-sized cucumber
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil
  • 1 tbsp white vinegar
  • ½ tsp sea salt
  • ½ tsp black pepper

The olive salsa

  • 1 cup olives
  • ¼ cup red onion
  • ¼ cup cherry tomatoes
  • ¼ cup fresh mint
  • 2 tbsp capers (optional)
  • 2 tbsp olive oil
  • 2 tbsp white vinegar
  • ½ tsp sea salt
  • ½ tsp black pepper

Toppings

  • ¼ cup vegan feta

Instructions

  1. Combine all ingredients for the lentil salad in a medium bowl and mix well.
  2. Combine all ingredients for the olive salsa in another medium bowl and mix well.
  3. Brush the cut side of the romaine halves with olive oil and season with salt and pepper.
  4. Grill the romaine cut side down on a hot skillet for about 2 minutes until charred.
  5. To serve, place the grilled romaine cut side up, top with lentil salad, add olive salsa, and sprinkle with vegan feta.
