Instructions
- Combine all ingredients for the lentil salad in a medium bowl and mix well.
- Combine all ingredients for the olive salsa in another medium bowl and mix well.
- Brush the cut side of the romaine halves with olive oil and season with salt and pepper.
- Grill the romaine cut side down on a hot skillet for about 2 minutes until charred.
- To serve, place the grilled romaine cut side up, top with lentil salad, add olive salsa, and sprinkle with vegan feta.
