Ingredients

  • 4 ears corn
  • 2 tablespoons extra-virgin olive oil or avocado oil
  • 1 cup arugula or spinach leaves
  • 4–6 pieces radishes
  • 6 ounces fresh blackberries
  • 1 piece avocado
  • 2 pieces green onions
  • 3 tablespoons fresh lime juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the grill to medium-high heat and rub 1 tablespoon of oil on the corn.
  2. Grill the corn for 15 to 20 minutes, turning occasionally until charred.
  3. While the corn is grilling, prepare the other ingredients by slicing and dicing as needed.
  4. In a small bowl, whisk together lime juice, remaining oil, salt, and pepper.
  5. Once the corn is done, let it cool, then cut the kernels off the cob.
  6. In a bowl, toss together the arugula, radishes, blackberries, avocado, green onions, and corn kernels.
  7. Drizzle the vinaigrette over the salad just before serving and toss gently.
