Instructions
- Grate the sweet potato and zucchini using a food processor or a cheese grater.
- Combine the grated veggies in a large bowl with flour, eggs, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Spoon the veggie mixture into the skillet and cook until golden brown on both sides.
- Drain on paper towels and season with additional salt and pepper if desired.
- Serve warm topped with sour cream and applesauce if using.
