Ingredients

The pancakes

  • 1 small to medium sweet potato
  • 2 medium zucchini
  • ½ cup whole-wheat flour
  • 4 large eggs
  • ¾ teaspoon salt
  • ¼ teaspoon pepper
  • as needed tablespoon olive oil (for cooking)

For serving

  • as needed sour cream (optional)
  • as needed applesauce (optional)

Instructions

  1. Grate the sweet potato and zucchini using a food processor or a cheese grater.
  2. Combine the grated veggies in a large bowl with flour, eggs, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat.
  4. Spoon the veggie mixture into the skillet and cook until golden brown on both sides.
  5. Drain on paper towels and season with additional salt and pepper if desired.
  6. Serve warm topped with sour cream and applesauce if using.
