Instructions
- Peel and boil sweet potatoes for 25 minutes until tender, then mash until smooth.
- Combine sweet potato puree ingredients in a bowl and blend until smooth.
- In a separate bowl, mix flour, sugar, baking powder, baking soda, and salt.
- Add eggs and milk to the dry ingredients and whisk until smooth.
- Incorporate 1 cup of sweet potato mixture and melted butter into the batter.
- Heat olive oil in a skillet over medium heat and pour ¼ cup of batter for each pancake.
- Cook until bubbles form on top, then flip and cook for an additional minute.
