Instructions
- Combine the pancake mix and pumpkin pie spice in a large bowl.
- In another bowl, mix the egg, mashed sweet potato, and melted butter until smooth, then add milk, apple cider vinegar, maple syrup, and vanilla.
- Combine the wet ingredients with the dry ingredients, mixing until just combined. Let the batter set for 2 minutes.
- Heat a griddle or skillet over medium-high heat and add butter.
- Scoop ¼ cup of batter onto the skillet and cook until bubbles form, then flip and cook until golden.
- Repeat until all batter is used and serve with desired toppings.
