Ingredients

The batter

  • 1 ½ cups Krusteaz Buttermilk Pancake & Waffle Mix
  • 1 tsp pumpkin pie spice
  • 1 large egg
  • ½ cup mashed sweet potato
  • 1 Tbsp melted butter
  • 1 cup milk of choice
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp pure maple syrup
  • 1 tsp pure vanilla extract

Toppings

  • to taste butter
  • to taste yogurt
  • to taste warm applesauce
  • to taste chopped nuts
  • to taste maple syrup

Instructions

  1. Combine the pancake mix and pumpkin pie spice in a large bowl.
  2. In another bowl, mix the egg, mashed sweet potato, and melted butter until smooth, then add milk, apple cider vinegar, maple syrup, and vanilla.
  3. Combine the wet ingredients with the dry ingredients, mixing until just combined. Let the batter set for 2 minutes.
  4. Heat a griddle or skillet over medium-high heat and add butter.
  5. Scoop ¼ cup of batter onto the skillet and cook until bubbles form, then flip and cook until golden.
  6. Repeat until all batter is used and serve with desired toppings.
