Fluffy Zucchini Pancakes

Ingredients

  • 1 cup rolled oats
  • ¼ cup milk
  • 1 medium banana or sweet potato
  • 1 tablespoon baking powder
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • ½ cup zucchini, shredded and moisture removed
  • 1-2 tablespoons chocolate chips (optional)

Instructions

  1. Blend all the ingredients except for the zucchini until you have a thick batter.
  2. Preheat a lightly greased pan on medium heat.
  3. Pour ¼ cup portions of batter into the pan and cover with a lid.
  4. Cook for 1-2 minutes until the edges start to brown, then flip and cook for another minute or two.
  5. Remove from the pan and serve immediately.
