Fluffy Zucchini Pancakes

zucchini, shredded and moisture removed

chocolate chips (optional)
Instructions
- Blend all the ingredients except for the zucchini until you have a thick batter.
- Preheat a lightly greased pan on medium heat.
- Pour ¼ cup portions of batter into the pan and cover with a lid.
- Cook for 1-2 minutes until the edges start to brown, then flip and cook for another minute or two.
- Remove from the pan and serve immediately.
