Ingredients

Dry Ingredients

  • cups white whole wheat flour
  • 1 cup shredded zucchini, squeezed and packed
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • teaspoon salt
  • ½ cup chocolate chunks

Wet Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 cup unsweetened almond milk

Instructions

  1. Preheat the waffle iron to medium heat.
  2. Shred the zucchini and remove excess moisture using a cloth or paper towel.
  3. In a large bowl, mix together all dry ingredients.
  4. Add the wet ingredients to the dry mix, except for the melted coconut oil.
  5. Melt the coconut oil and add it to the batter, then mix well.
  6. Spray the waffle iron with coconut oil cooking spray.
  7. Scoop about ⅔ cup of batter into the waffle iron, close it, and cook for 1½ to 2½ minutes.
  8. Serve the waffles with sliced banana and maple syrup.
