Instructions
- Preheat the waffle iron to medium heat.
- Shred the zucchini and remove excess moisture using a cloth or paper towel.
- In a large bowl, mix together all dry ingredients.
- Add the wet ingredients to the dry mix, except for the melted coconut oil.
- Melt the coconut oil and add it to the batter, then mix well.
- Spray the waffle iron with coconut oil cooking spray.
- Scoop about ⅔ cup of batter into the waffle iron, close it, and cook for 1½ to 2½ minutes.
- Serve the waffles with sliced banana and maple syrup.
