Ingredients

Dry Ingredients

  • 2 cups whole wheat pastry flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt

  • ¼ teaspoon ground nutmeg
  • ¼ cup brown sugar

Wet Ingredients

  • 4 large eggs
  • cups milk
  • ½ cup plain Greek yogurt
  • 2 teaspoons vanilla extract

Additions

  • 1 cup shredded zucchini
  • 1 tablespoon lemon zest
  • ¼ cup roughly chopped toasted walnuts

For Serving

  • to taste butter
  • to taste pure maple syrup

Instructions

  1. Preheat the waffle iron.
  2. In a large bowl, whisk together the dry ingredients.
  3. In a separate bowl, mix the wet ingredients.
  4. Combine the wet and dry ingredients until moistened, being careful not to over mix.
  5. Fold in the shredded zucchini, lemon zest, and walnuts.
  6. Cook the waffles according to your waffle iron's instructions and serve immediately.
