Ingredients

The batter

  • 1 ½ cups whole wheat flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups unsweetened almond milk (or milk of choice)
  • 1 ½ cups grated zucchini
  • 2 units eggs
  • ¼ cup maple syrup
  • 2 teaspoons vanilla
  • ½ cup chopped nuts (optional)

For serving

  • to taste maple syrup
  • to taste butter (or vegan buttery spread)

Instructions

  1. Preheat and grease the waffle iron.
  2. In a large bowl, stir together the whole wheat flour, cinnamon, baking powder, and salt.
  3. In a separate bowl, whisk together the almond milk, zucchini, eggs, maple syrup, and vanilla.
  4. Pour the wet mixture into the dry ingredients and stir until just mixed. Fold in the nuts if using.
  5. Spread about 1 cup of the batter onto one side of the waffle iron, close, flip, and cook for about 5 minutes or until golden brown.
  6. Serve with butter and maple syrup if desired.
