Zucchini Bread Waffles

Instructions
- Preheat and grease the waffle iron.
- In a large bowl, stir together the whole wheat flour, cinnamon, baking powder, and salt.
- In a separate bowl, whisk together the almond milk, zucchini, eggs, maple syrup, and vanilla.
- Pour the wet mixture into the dry ingredients and stir until just mixed. Fold in the nuts if using.
- Spread about 1 cup of the batter onto one side of the waffle iron, close, flip, and cook for about 5 minutes or until golden brown.
- Serve with butter and maple syrup if desired.
