Ingredients

  • ½ cup coconut sugar
  • ¼ tsp vanilla liquid stevia
  • 1 tsp cinnamon
  • ½ cup coconut oil (liquified)
  • ½ cup applesauce
  • 2 tbsp applesauce
  • 2 cups organic blueberries
  • 1 cup quinoa flour
  • 1 cup walnuts (ground into meal)

Instructions

  1. Preheat the oven.
  2. Combine the coconut sugar, stevia, and cinnamon.
  3. Mix in the liquified coconut oil and applesauce.
  4. Add quinoa flour and ground walnuts to the mixture.
  5. Fold in the blueberries.
  6. Spoon the batter into muffin tins.
  7. Bake for about 18 minutes.
