Turkey Avocado Egg Wrap

Ingredients

The wrap

  • ½ tsp cornstarch
  • 1 tsp water
  • 2 large eggs
  • 2 pinches salt and pepper
  • ½ Tbsp coconut oil or butter

The filling

  • cup finely shredded swiss cheese
  • 4 slices deli turkey
  • 1 small tomato, thinly sliced
  • ½ avocado, thinly sliced
  • ½ cup spinach

Instructions

  1. Whisk together cornstarch and water in a mixing bowl.
  2. Add eggs, salt, and pepper, and whisk until well combined.
  3. Heat a 12-inch non-stick skillet over medium heat for 1-2 minutes.
  4. Add coconut oil to the pan and spread to coat.
  5. Pour in the egg mixture and tilt the pan to coat the bottom evenly.
  6. Cook for 2-3 minutes until the bottom is set and the top is mostly set.
  7. Loosen the edges with a spatula and carefully flip the wrap.
  8. Sprinkle cheese on top and cook for another minute until set.
  9. Remove from heat and layer turkey, tomatoes, avocados, and spinach on the wrap.
  10. Roll up the wrap, cut in half, and serve immediately.
