Turkey Avocado Egg Wrap

The filling

finely shredded swiss cheese

deli turkey

tomato, thinly sliced

Instructions
- Whisk together cornstarch and water in a mixing bowl.
- Add eggs, salt, and pepper, and whisk until well combined.
- Heat a 12-inch non-stick skillet over medium heat for 1-2 minutes.
- Add coconut oil to the pan and spread to coat.
- Pour in the egg mixture and tilt the pan to coat the bottom evenly.
- Cook for 2-3 minutes until the bottom is set and the top is mostly set.
- Loosen the edges with a spatula and carefully flip the wrap.
- Sprinkle cheese on top and cook for another minute until set.
- Remove from heat and layer turkey, tomatoes, avocados, and spinach on the wrap.
- Roll up the wrap, cut in half, and serve immediately.
